Here, Francis Mandin has been shaping the cuisine at Bad Schauenburg for over 34 years. His roots lie in La Rochelle on the French Atlantic coast – a background that continues to have a noticeable influence on his style to this day.

 

French finesse, respect for the ingredients and a clear, precise flavour profile combine with a deep regional connection and a seasonal approach. His cuisine is not flashy, but confident. Not frivolous, but focused.

By deliberately limiting its opening hours to four days a week, the Basler Stübli retains its exclusive character.
